VERDICCHIO DEI CASTELLI DI JESI CLASSICO DOP Sup Superiore | 2020 Grape variety 100% Verdicchio Alcohol content 13.5% vol Vinification Vinification: Mechanical harvest of healthy monoclonal Verdiccio grapes , de-stemmed, placed in the press and left to cryomacerate for a period of 5 days, crushing, soft pressing and lowering of temperature thanks to food CO2, followed by a pre-fermentation and racking through static decantation of the must to low temperature in large concrete vats for a period of not less than 12 hours.
