Mechanical harvesting of healthy monoclonal Verdicciho grapes, destemmed, pressed and cryomacerated for 5 days; then crushed, soft pressed and lowered to temperature with alimentary CO2, followed by prefermentation and racking by means of low-temperature, static sedimentation of the must in large cement tanks for no less than 12 hours. Fermentation for up to 3 weeks in steel tanks at a controlled temperature, then conveyed to cement tanks and left on the lees for 3 months with frequent pumpovers. At the end gets filtered, clarified, bottled and left to refine for at least 60 days before release onto the market.
Intense lemon color. The nose ranges from beautiful scents of white and yellows flowers to Golden Delicious apple, with hints of pineapple and dried fruits. On the palate is full, tasty
and framed, balanced by its natural freshness and a long, aromatic persistance, with a pleasant aftertaste of exotic fruits. Serving temperature 12-13°C.
Being a full-bodied wine with marked acidity, may be tasted immediately as well as after further ageing, which brings remarkable evolution.
Such a young, fragrant wine with an important frame is a good matching with fish dishes from both traditional and modern cuisine; especially with first courses based on white fish sauces (risotto and spaghetti with clams), as well as grilled ones and dishes with double cream.
It also reads about the meat of small farm animals, and goes really well with rabbit meat.
